FAYETTEVILLE, Ark. — Mahfuzur Rahman, food scientist and grain processing engineer, is among the most cited authors for scientific papers published by the Institute of Food Technologists.

For his achievement, Rahman recently received a Tanner Award for Comprehensive Reviews from the IFT. He joined the Arkansas Agricultural Experiment Station, the research arm of the University of Arkansas System Division of Agriculture, in 2023.

Rahman is as an assistant professor in the food science department and teaches courses through the Dale Bumpers College of Agricultural, Food and Life Sciences on protein processing and novel food processing technologies.

“It is an annual tradition to acknowledge those papers in each journal that were most highly cited over the past three years, based on Web of Science data from the end of March,” wrote Mary Ellen Camire, editor-in-chief of Comprehensive Reviews in Food Science and Food Safety. “I feel that these citation rates reflect the important topics addressed by our reviews.”

The Tanner Awards acknowledge Fred Wilbur Tanner (1888–1957), the first editor of founding journal, Food Research. The IFT celebrated the authors at the Reviewers’ Reception at IFT FIRST: Annual Event and Expo in July.

Rahman was among the five runners-up with greater than 100 citations each. The paper, “Ultrasound-assisted extraction and modification of plant-based proteins: Impact on physicochemical, functional, and nutritional properties,” was co-authored with Buddhi P. Lamsal at Iowa State University. Published by Comprehensive Reviews in Food Science and Food Safety in 2021, it was cited 114 times. It was among 192 articles published by the journal in 2021, with 25 cited 50 or more times by March 2024.

The most cited 2021 paper in the journal was “Modification of plant proteins for improved functionality: A review,” by Felix U. Akharume and Akinbode A. Adedeji of the University of Kentucky, and Rotimi E. Aluko of the University of Manitoba. The paper registered 180 citations by the end of March 2024.
