WATCH: Ali Ubeyitogullari – Enhancing Food Systems | Behind the Discovery

Ali Ubeyitogullari’s research is at the intersection of food engineering and human health. He’s currently focused on two parallel projects. First, he’s applying supercritical carbon dioxide technology to improve the bioavailability of micronutrients in human foods. This helps set the stage for Ubeyitogullari’s other project — 3D printing foods.
Ubeyitogullari envisions a world where users can send a menu selection to a 3D printer from anywhere, and the food could be built from ingredients that include micronutrient and possibly even medication nanoparticles.
Ubeyitogullari works as a food engineer for the Arkansas Agricultural Experiment Station. He has research appointments in the departments of food science and biological and agricultural engineering. He also has a teaching appointment in the Dale Bumpers College of Agricultural, Food and Life Sciences at the University of Arkansas.
