A single grain of rice.

That’s the focus of Griffiths Atungulu’s research as an associate professor and director of the Arkansas Rice Processing Program. Much of his work deals with the post-harvest processing of rice and ensuring the greatest possible quality throughout the grain drying process. Even the smallest improvement — beginning with that single grain of rice — has great potential to improve food security across the globe.
